Cucina Archive · Antipasto
Twice-baked rings wetted just enough to soften, then loaded with a tomato mix that has been sitting long enough to be worth it.
C04 · Developed formula · yields 4 to 5 seven-inch frazzelle

| San Marzano tomatoes | 1 can, 28 oz | |
|---|---|---|
| White onion | 1/4 | |
| Fresh basil | to taste | |
| Oregano | to taste | |
| Salt | to taste | |
| Olive oil | to taste | |
| Red pepper flakes | to taste | |
| Balsamic vinegar | optional |
Combine everything for the mix and leave it 20 to 30 minutes. Overnight is better.
Wet the frazzelle briefly and let them sit five minutes.
Load and serve.
Briefly is the whole instruction. A frazzella taken too far goes to paste, and the five minutes afterward is where it finishes softening, not under the tap.
