Scale
Process
Autolyse flour and water 60 minutes without starter or salt. Mix in starter and salt on low 3-5 minutes. Four folds every 30 minutes during the first 2 hours. Bulk at about 68-72 F, preshape and rest 20 minutes, then final proof or cold proof at least 16 hours.
Bake
Dutch oven preheated to 500 F. Covered 20 minutes at 500 F, then uncovered 20-25 minutes at 450 F. Cool until the center is below about 100 F before slicing.
