Chicken, Spinach and Tomato Pan

Method

  1. Brown the chicken and set it aside.

  2. Soften the garlic, add the tomatoes whole and let them start to collapse.

  3. Wilt the spinach through, return the chicken, and season.

Notes

Tomatoes go in whole. They hold until they burst and then give up their juice all at once, which is the only sauce this has.
